Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 cup Bhutanese cheese, cubed
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3-4 green chilies, sliced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon salt
  • 2 tablespoons oil
  • 2 cups water

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and sauté until they start to crackle.
  2. Add chopped onions and green chilies. Sauté until the onions are translucent.
  3. Add turmeric, coriander powder, and salt. Stir well.
  4. Add diced tomatoes and cook until they turn soft and mushy.
  5. Add the cubed potatoes and water. Cover and cook until the potatoes are tender.
  6. Add the cubed cheese and stir gently until the cheese melts and forms a creamy sauce.
  7. Simmer for a few minutes, then remove from heat.
  8. Serve the Bhutanese Potato and Cheese Curry hot with steamed rice or traditional Bhutanese red rice.
