Ingredients
- 4 large potatoes, peeled and cubed
- 1 cup Bhutanese cheese, cubed
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3-4 green chilies, sliced
- 1 teaspoon turmeric
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon salt
- 2 tablespoons oil
- 2 cups water
Instructions
- Heat oil in a large pot over medium heat. Add cumin seeds and sauté until they start to crackle.
- Add chopped onions and green chilies. Sauté until the onions are translucent.
- Add turmeric, coriander powder, and salt. Stir well.
- Add diced tomatoes and cook until they turn soft and mushy.
- Add the cubed potatoes and water. Cover and cook until the potatoes are tender.
- Add the cubed cheese and stir gently until the cheese melts and forms a creamy sauce.
- Simmer for a few minutes, then remove from heat.
- Serve the Bhutanese Potato and Cheese Curry hot with steamed rice or traditional Bhutanese red rice.
