Ingredients
- 4 medium potatoes, peeled and cubed
- 1 cup cauliflower florets
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, slit lengthwise
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 2 tablespoons vegetable oil
- Salt to taste

Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion, green chilies, ginger, and garlic. Sauté until the onions are soft and translucent.
- Add the chopped tomatoes and cook until they are soft and pulpy.
- Stir in the turmeric powder and salt. Add the cubed potatoes, cauliflower, and green beans. Mix well to coat the vegetables with the spices.
- Pour in enough water to just cover the vegetables. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the vegetables are tender and the stew has thickened.
- Adjust the seasoning if needed and serve hot.
