Ingredients

  • 4 medium potatoes, peeled and cubed
  • 1 cup cauliflower florets
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit lengthwise
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Water

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onion, green chilies, ginger, and garlic. Sauté until the onions are soft and translucent.
  3. Add the chopped tomatoes and cook until they are soft and pulpy.
  4. Stir in the turmeric powder and salt. Add the cubed potatoes, cauliflower, and green beans. Mix well to coat the vegetables with the spices.
  5. Pour in enough water to just cover the vegetables. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the vegetables are tender and the stew has thickened.
  6. Adjust the seasoning if needed and serve hot.
