Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 4 tomatoes, diced
- 4 garlic cloves, minced
- 2-inch piece of ginger, grated
- 2 green chilies, sliced
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon Sichuan pepper, ground
- Salt to taste
- 2 tablespoons vegetable oil
- 4 cups water
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic, grated ginger, and green chilies to the pot. Cook for a few minutes until the raw aroma disappears.
- Stir in the turmeric, cumin powder, coriander powder, red chili powder, and Sichuan pepper. Cook for another minute to toast the spices.
- Add the diced tomatoes and cook until they soften and release their juices.
- Place the chicken pieces in the pot and coat them with the spice mixture. Cook for a few minutes to seal the flavors.
- Pour in the water and season with salt. Bring the stew to a boil, then reduce the heat to low and simmer for about 45 minutes, or until the chicken is tender.
- Garnish the Jasha Maru with fresh cilantro and serve hot with steamed rice or traditional Bhutanese red rice.
