Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 4 garlic cloves, minced
  • 2-inch piece of ginger, grated
  • 2 green chilies, sliced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon Sichuan pepper, ground
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic, grated ginger, and green chilies to the pot. Cook for a few minutes until the raw aroma disappears.
  3. Stir in the turmeric, cumin powder, coriander powder, red chili powder, and Sichuan pepper. Cook for another minute to toast the spices.
  4. Add the diced tomatoes and cook until they soften and release their juices.
  5. Place the chicken pieces in the pot and coat them with the spice mixture. Cook for a few minutes to seal the flavors.
  6. Pour in the water and season with salt. Bring the stew to a boil, then reduce the heat to low and simmer for about 45 minutes, or until the chicken is tender.
  7. Garnish the Jasha Maru with fresh cilantro and serve hot with steamed rice or traditional Bhutanese red rice.
