Ingredients

  • 1 lb pork, cut into bite-sized pieces

  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Instructions

  1. Heat oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the pork pieces to the pot and cook until browned on all sides.
  3. Stir in the turmeric, cumin powder, coriander powder, and chili powder. Cook for a few minutes until the spices are fragrant.
  4. Add the chopped tomatoes and green chilies to the pot. Cook until the tomatoes break down and release their juices.
  5. Add the cubed potatoes and water to the pot. Season with salt and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for about 45 minutes, or until the pork is tender and the potatoes are cooked through.
  7. Adjust the seasoning if needed and serve hot with steamed rice or traditional Bhutanese red rice.
