Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, chopped

- 2 green chilies, chopped

- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 2 cups vegetable broth
- Salt to taste

Instructions
- Heat oil in a large pot over medium heat.
- Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onion is soft and translucent.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Stir in the turmeric, cumin powder, coriander powder, and red chili powder.
- Add the diced potatoes and vegetable broth. Season with salt.
- Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes or until the potatoes are tender.
- Garnish with fresh cilantro before serving.
