Bhutanese Spicy Potato Stew With Pork (kharang Tshoem Paa)

Ingredients

  • 1 lb pork, cut into bite-sized pieces
  • 4 large potatoes, peeled and cubed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 cups water
  • 2 tbsp oil

Instructions

  1. Heat oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent.
  2. Add the pork pieces to the pot and cook until browned on all sides.
  3. Stir in the turmeric, cumin powder, coriander powder, and chili powder. Cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes and green chilies. Cook until the tomatoes break down and release their juices.
  5. Add the cubed potatoes and water to the pot. Season with salt and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 45 minutes or until the pork and potatoes are tender.
  7. Adjust the seasoning if needed and serve hot.
