Bhutanese Spicy Potato Stew with Pork, also known as Kharang Tshoem Paa, is a traditional dish from Bhutan that is packed with bold flavors and hearty ingredients.
Ingredients
- 1 lb pork, cut into bite-sized pieces
- 4 large potatoes, peeled and cubed
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp chili powder
- Salt to taste
- 2 cups water
- 2 tbsp oil
Instructions
- Heat oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent.
- Add the pork pieces to the pot and cook until browned on all sides.
- Stir in the turmeric, cumin powder, coriander powder, and chili powder. Cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and green chilies. Cook until the tomatoes break down and release their juices.
- Add the cubed potatoes and water to the pot. Season with salt and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes or until the pork and potatoes are tender.
- Adjust the seasoning if needed and serve hot.
