Biber Dolmasi (baked Stuffed Bell Peppers)
Biber Dolmasi, also known as Baked Stuffed Bell Peppers, is a traditional Azerbaijani dish that is both flavorful and satisfying. This dish is made by stuffing bell peppers with a delicious mixture of rice, ground meat, and aromatic spices, then baking them to perfection.
Ingredients
- 4 large bell peppers
- 1 cup rice
- 300g ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 tomatoes, grated
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon dried mint
- 1/4 teaspoon red pepper flakes
- 1 cup hot water
Instructions
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, ground meat, onion, tomatoes, parsley, olive oil, salt, black pepper, paprika, cumin, cinnamon, dried mint, and red pepper flakes. Mix well.
- Stuff the bell peppers with the rice and meat mixture, and place them in a baking dish.
- Pour the hot water into the bottom of the baking dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the tops are slightly browned.
- Serve the Biber Dolmasi hot, garnished with fresh herbs if desired.
