Biber Dolmasi (baked Stuffed Bell Peppers)

Biber Dolmasi, also known as Baked Stuffed Bell Peppers, is a traditional Azerbaijani dish that is both flavorful and satisfying. This dish is made by stuffing bell peppers with a delicious mixture of rice, ground meat, and aromatic spices, then baking them to perfection.

Biber Dolmasi (baked Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 300g ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon dried mint
  • 1/4 teaspoon red pepper flakes
  • 1 cup hot water

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground meat, onion, tomatoes, parsley, olive oil, salt, black pepper, paprika, cumin, cinnamon, dried mint, and red pepper flakes. Mix well.
  4. Stuff the bell peppers with the rice and meat mixture, and place them in a baking dish.
  5. Pour the hot water into the bottom of the baking dish.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the tops are slightly browned.
  8. Serve the Biber Dolmasi hot, garnished with fresh herbs if desired.
