Bibim Guksu (비빔국수)

Ingredients
- 8 oz (225g) somen or thin wheat noodles
- 1/2 cup (120ml) gochujang (Korean red chili paste)
- 3 tbsp (45ml) rice vinegar
- 2 tbsp (30ml) soy sauce or tamari
- 2 tbsp (30ml) sesame oil
- 1 tbsp (15ml) sugar
- 1 small cucumber, julienned
- 1 small carrot, julienned
- 2 green onions, thinly sliced
- 1/4 cup (60ml) toasted sesame seeds
Instructions
- Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
- In a large mixing bowl, whisk together the gochujang, rice vinegar, soy sauce, sesame oil, and sugar to make the sauce.
- Add the cooked noodles to the sauce and toss to coat evenly.
- Divide the noodles among serving bowls and top with julienned cucumber, carrot, and sliced green onions.
- Sprinkle with toasted sesame seeds and serve immediately.
