Bibim Guksu (비빔국수)

Ingredients

  • 8 oz (225g) somen or thin wheat noodles
  • 1/2 cup (120ml) gochujang (Korean red chili paste)
  • 3 tbsp (45ml) rice vinegar
  • 2 tbsp (30ml) soy sauce or tamari
  • 2 tbsp (30ml) sesame oil
  • 1 tbsp (15ml) sugar
  • 1 small cucumber, julienned
  • 1 small carrot, julienned
  • 2 green onions, thinly sliced
  • 1/4 cup (60ml) toasted sesame seeds

Instructions

  1. Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
  2. In a large mixing bowl, whisk together the gochujang, rice vinegar, soy sauce, sesame oil, and sugar to make the sauce.
  3. Add the cooked noodles to the sauce and toss to coat evenly.
  4. Divide the noodles among serving bowls and top with julienned cucumber, carrot, and sliced green onions.
  5. Sprinkle with toasted sesame seeds and serve immediately.
