Bibim Naengmyeon
Bibim naengmyeon is a popular Korean cold noodle dish that is perfect for hot summer days. It features chewy buckwheat noodles, fresh vegetables, and a spicy, tangy sauce.
Ingredients
- 2 bundles of naengmyeon noodles
- 1/2 cup of gochujang (Korean red chili paste)
- 2 tablespoons of rice vinegar
- 2 tablespoons of sugar
- 1 teaspoon of sesame oil
- 1/2 cup of julienned cucumber
- 1/2 cup of julienned radish
- 1/2 cup of julienned pear
- 2 hard-boiled eggs, sliced
- 1 tablespoon of toasted sesame seeds
Instructions
- Cook the naengmyeon noodles according to the package instructions. Drain and rinse under cold water. Set aside.
- In a small bowl, mix the gochujang, rice vinegar, sugar, and sesame oil to make the sauce.
- In a large bowl, combine the cold noodles with the julienned vegetables and pear.
- Pour the sauce over the noodles and vegetables. Toss to coat evenly.
- Divide the bibim naengmyeon into serving bowls and top with sliced hard-boiled eggs and toasted sesame seeds.
