Ingredients

  • 2 bundles of naengmyeon noodles
  • 1/2 cup of gochujang (Korean red chili paste)
  • 3 tablespoons of rice vinegar
  • 2 tablespoons of sugar
  • 1 tablespoon of sesame oil
  • 1 cucumber, julienned
  • 1/2 cup of radish, julienned
  • 2 hard-boiled eggs, sliced
  • 1/4 cup of roasted sesame seeds

Instructions

  1. Boil the naengmyeon noodles according to the package instructions. Drain and rinse the noodles under cold water. Set aside.
  2. In a small bowl, mix the gochujang, rice vinegar, sugar, and sesame oil to make the sauce.
  3. In a large mixing bowl, combine the cooked noodles, cucumber, and radish.
  4. Pour the sauce over the noodles and vegetables. Toss to coat everything evenly.
  5. Divide the bibim naengmyeon into serving bowls and top with sliced hard-boiled eggs and roasted sesame seeds.
