Ingredients

  • 1 lb sauerkraut
  • 1 lb mixed meats (such as pork, beef, and sausage), cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 3 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp caraway seeds
  • Salt and pepper to taste

Instructions

  1. Place the sauerkraut in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes. Drain and set aside.
  2. In the same pot, brown the mixed meats over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are tender.
  3. Add the mushrooms, beef broth, red wine, bay leaves, caraway seeds, and the cooked sauerkraut to the pot. Season with salt and pepper.
  4. Simmer the stew over low heat for 1.5 hours, stirring occasionally.
  5. Adjust seasoning if needed, then serve hot.
