Bigos (hearty Hunter's Stew)
Bigos, also known as "Hearty Hunter's Stew," is a traditional dish from Palatine cuisine that is packed with flavor and perfect for a cozy meal on a chilly day.
Ingredients
- 1 lb sauerkraut
- 1 lb mixed meats (such as pork, beef, and sausage), cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup mushrooms, sliced
- 3 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 tsp caraway seeds
- Salt and pepper to taste
Instructions
- Place the sauerkraut in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes. Drain and set aside.
- In the same pot, brown the mixed meats over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are tender.
- Add the mushrooms, beef broth, red wine, bay leaves, caraway seeds, and the cooked sauerkraut to the pot. Season with salt and pepper.
- Simmer the stew over low heat for 1.5 hours, stirring occasionally.
- Adjust seasoning if needed, then serve hot.
