Bihari Mutton Curry (बिहारी मटन करी)
Bihari Mutton Curry is a traditional dish from the Bihari cuisine, known for its rich and aromatic flavors. This slow-cooked curry is a perfect blend of spices and tender mutton, making it a popular choice for special occasions and gatherings.
Ingredients
- 500g mutton, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup yogurt
- 2 tbsp ginger-garlic paste
- 2-3 green chilies, slit
- 1 tsp cumin seeds
- 1 bay leaf
- 1-inch cinnamon stick
- 4-5 cloves
- 2-3 green cardamoms
- 1/2 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2-3 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a heavy-bottomed pan and add cumin seeds, bay leaf, cinnamon, cloves, and cardamoms. Sauté until fragrant.
- Add chopped onions and cook until golden brown.
- Stir in ginger-garlic paste and green chilies, then add the mutton pieces. Cook until the mutton is browned.
- Pour in the tomato puree, yogurt, and all the spices. Mix well and cook for a few minutes.
- Pour in enough water to cover the mutton and bring to a boil. Reduce heat, cover, and simmer for 1 hour or until the mutton is tender.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
