Bihari Mutton Curry (बिहारी मटन करी)

Ingredients

  • 500g mutton, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 2-3 green chilies, slit
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 4-5 cloves
  • 2-3 green cardamoms
  • 1/2 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2-3 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a heavy-bottomed pan and add cumin seeds, bay leaf, cinnamon, cloves, and cardamoms. Sauté until fragrant.
  2. Add chopped onions and cook until golden brown.
  3. Stir in ginger-garlic paste and green chilies, then add the mutton pieces. Cook until the mutton is browned.
  4. Pour in the tomato puree, yogurt, and all the spices. Mix well and cook for a few minutes.
  5. Pour in enough water to cover the mutton and bring to a boil. Reduce heat, cover, and simmer for 1 hour or until the mutton is tender.
  6. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
