Ingredients

  • 2 medium potatoes, diced
  • 1 small cauliflower, cut into florets
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
  2. Add the ginger and garlic paste, and sauté for a minute.
  3. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
  4. Add the diced potatoes and cauliflower florets. Mix well to coat the vegetables with the masala.
  5. Cover and cook on medium heat until the vegetables are tender, stirring occasionally.
  6. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
