Bihari-style Aloo Gobi (बिहारी-स्टाइल आलू गोभी)
This Bihari-style Aloo Gobi is a classic dish from the Bihari Cuisine that combines the earthy flavors of potatoes and cauliflower with aromatic spices.
Ingredients
- 2 medium potatoes, diced
- 1 small cauliflower, cut into florets
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
- Add the ginger and garlic paste, and sauté for a minute.
- Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Add the diced potatoes and cauliflower florets. Mix well to coat the vegetables with the masala.
- Cover and cook on medium heat until the vegetables are tender, stirring occasionally.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
