Bihari-style Aloo Methi (बिहारी-स्टाइल आलू मेथी)

Ingredients

  • 4 medium potatoes, peeled and diced
  • 2 cups fresh fenugreek leaves (methi), washed and chopped
  • 1 teaspoon cumin seeds
  • 2-3 green chilies, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 1 teaspoon ghee (clarified butter)
  • 1 teaspoon sugar (optional)
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once the seeds crackle, add green chilies and sauté for a minute.
  2. Add diced potatoes and cook until they are slightly golden.
  3. Now, add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
  4. Add chopped fenugreek leaves and mix. Cover and cook on low heat until the potatoes are tender and the methi is cooked.
  5. Once done, add garam masala, ghee, and sugar (if using). Mix gently and cook for another 2-3 minutes.
  6. Garnish with fresh coriander leaves and serve hot with roti or rice.
