Ingredients
- 4 medium potatoes, peeled and diced
- 2 cups fresh fenugreek leaves (methi), washed and chopped
- 1 teaspoon cumin seeds
- 2-3 green chilies, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- 1 teaspoon ghee (clarified butter)
- 1 teaspoon sugar (optional)
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once the seeds crackle, add green chilies and sauté for a minute.
- Add diced potatoes and cook until they are slightly golden.
- Now, add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
- Add chopped fenugreek leaves and mix. Cover and cook on low heat until the potatoes are tender and the methi is cooked.
- Once done, add garam masala, ghee, and sugar (if using). Mix gently and cook for another 2-3 minutes.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
