Bihari-style Baingan Bharta (बिहारी-स्टाइल बैंगन भरता)
Bihari-style Baingan Bharta is a traditional dish from the state of Bihar in India. It is a flavorful and spicy mashed eggplant dish that is perfect to be enjoyed with roti or rice.
Ingredients
- 2 large eggplants
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C). Prick the eggplants with a fork and roast them in the oven for 30-40 minutes until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
- Add green chilies, ginger, and garlic. Sauté for a few minutes.
- Add tomatoes and cook until they are soft and mushy.
- Add turmeric, red chili powder, coriander powder, and salt. Mix well.
- Add the mashed eggplant and mix everything together. Cook for 5-7 minutes.
- Sprinkle garam masala and garnish with fresh cilantro.
- Serve hot with roti or rice.
