Ingredients

  • 500g bhindi (okra), washed and dried
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add the chopped tomatoes and green chilies. Cook until the tomatoes are soft and oil separates.
  3. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  4. Add the bhindi and mix gently. Cover and cook on low heat until the bhindi is tender.
  5. Sprinkle garam masala and cook for another 2-3 minutes.
  6. Serve hot with roti or rice.
