Bihari-style Chicken Biryani (बिहारी-स्टाइल चिकन बिरयानी)

Ingredients

  • 2 cups basmati rice, soaked for 30 minutes
  • 500g chicken, cut into pieces
  • 2 onions, thinly sliced
  • 1/2 cup yogurt
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon ginger-garlic paste
  • Whole spices (bay leaf, cinnamon, cardamom, cloves)
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon biryani masala
  • Salt to taste
  • 4 cups water
  • 2 tablespoons ghee (clarified butter)

Instructions

  1. Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Stir in the ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
  4. Add the chicken pieces, yogurt, red chili powder, turmeric powder, biryani masala, and salt. Cook until the chicken is partially cooked.
  5. Layer the soaked rice over the chicken mixture and pour water over the rice.
  6. Sprinkle fresh coriander and mint leaves on top. Cover and cook on low heat until the rice and chicken are fully cooked.
  7. Fluff the biryani gently with a fork and serve hot.
