Bihari-style Chicken Biryani is a flavorful and aromatic dish that originates from the state of Bihar in India. This traditional recipe is known for its unique blend of spices and tender chicken, creating a mouthwatering meal that is perfect for special occasions or gatherings.
Ingredients
- 2 cups basmati rice, soaked for 30 minutes
- 500g chicken, cut into pieces
- 2 onions, thinly sliced
- 1/2 cup yogurt
- 4 tomatoes, chopped
- 4 green chilies, slit
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1 tablespoon ginger-garlic paste
- Whole spices (bay leaf, cinnamon, cardamom, cloves)
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon biryani masala
- Salt to taste
- 4 cups water
- 2 tablespoons ghee (clarified butter)
Instructions
- Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
- Add the chicken pieces, yogurt, red chili powder, turmeric powder, biryani masala, and salt. Cook until the chicken is partially cooked.
- Layer the soaked rice over the chicken mixture and pour water over the rice.
- Sprinkle fresh coriander and mint leaves on top. Cover and cook on low heat until the rice and chicken are fully cooked.
- Fluff the biryani gently with a fork and serve hot.
