Bihari-style Chicken Handi (बिहारी-स्टाइल चिकन हांडी)
This Bihari-style Chicken Handi is a delicious and flavorful dish that originates from the state of Bihar in India. It is a popular dish known for its rich and aromatic gravy, cooked with traditional Bihari spices.
Ingredients
- 500g chicken, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1/2 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp cumin seeds
- 4-5 green chilies, slit
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
- 2 tbsp oil
- 1/2 cup water
Instructions
- Heat oil in a handi or deep pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for 2 minutes.
- Now, add chicken pieces and cook until they turn white.
- Add tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
- Whisk the yogurt and add it to the chicken. Cook for 5 minutes.
- Pour water, cover the handi, and let the chicken cook on low heat for 15-20 minutes.
- Add garam masala, green chilies, and fresh coriander leaves. Cook for another 5 minutes.
- Remove from heat and serve hot.
