Bihari-style Chicken Handi (बिहारी-स्टाइल चिकन हांडी)

Ingredients

  • 500g chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp cumin seeds
  • 4-5 green chilies, slit
  • 1/4 cup fresh coriander leaves, chopped
  • Salt to taste
  • 2 tbsp oil
  • 1/2 cup water

Instructions

  1. Heat oil in a handi or deep pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for 2 minutes.
  4. Now, add chicken pieces and cook until they turn white.
  5. Add tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
  6. Whisk the yogurt and add it to the chicken. Cook for 5 minutes.
  7. Pour water, cover the handi, and let the chicken cook on low heat for 15-20 minutes.
  8. Add garam masala, green chilies, and fresh coriander leaves. Cook for another 5 minutes.
  9. Remove from heat and serve hot.
