Ingredients
- 1 kg carrots, grated
- 1 liter full-fat milk
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/4 cup mixed nuts (cashews, almonds, pistachios), chopped
- 1/2 tsp cardamom powder
Instructions
- Heat ghee in a heavy-bottomed pan and add the grated carrots. Sauté for 5 minutes.
- Pour in the milk and cook on medium heat, stirring occasionally, until the carrots are soft and the milk has reduced.
- Add sugar and continue to cook until the mixture thickens.
- Stir in the cardamom powder and chopped nuts. Cook for another 5 minutes.
- Remove from heat and serve hot or cold, garnished with more nuts if desired.
