Bila Asa (nile Perch Delight)

Ingredients

  • 4 Nile perch fillets
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the Nile perch fillets with salt, pepper, and half of the minced garlic.
  2. Heat the vegetable oil in a pan over medium heat.
  3. Add the seasoned fish fillets and cook for 3-4 minutes on each side until golden brown. Remove from the pan and set aside.
  4. In the same pan, add the chopped onion and remaining garlic. Sauté until the onion is translucent.
  5. Add the diced tomatoes, ground coriander, cumin, paprika, and cayenne pepper. Cook for 5-7 minutes, stirring occasionally.
  6. Return the cooked fish fillets to the pan, spoon the tomato mixture over the fish, and simmer for an additional 5 minutes.
  7. Remove from heat and serve the Bila Asa hot with your choice of side dishes.
