Bing Hu Jiao Zi (crystal Shrimp Dumplings)

Ingredients

  • 200g shrimp, peeled and deveined
  • 100g water chestnuts, finely chopped
  • 1 tablespoon ginger, minced
  • 1 tablespoon spring onions, finely chopped
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 20 round dumpling wrappers

Instructions

  1. In a bowl, mix together the shrimp, water chestnuts, ginger, spring onions, soy sauce, sesame oil, sugar, and white pepper.
  2. Place a small spoonful of the shrimp mixture in the center of each dumpling wrapper.
  3. Moisten the edges of the wrapper with water, then pleat and seal the dumplings.
  4. Steam the dumplings for 8-10 minutes until the wrappers turn translucent and the filling is cooked through.
