Biogradska Gora Forest Mushroom Soup

Ingredients

  • 500g mixed forest mushrooms, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 potatoes, peeled and diced
  • 1 liter vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown.
  3. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Remove from heat and serve hot. Garnish with a drizzle of cream and a sprinkle of chopped fresh herbs if desired.
