Ingredients
- 3 lbs moose ribs
- 1 cup birch syrup
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tsp ground ginger

Instructions
- Preheat the oven to 300°F (150°C).
- Season the moose ribs with salt and pepper, then place them in a roasting pan.
- In a small bowl, mix the birch syrup, soy sauce, garlic, and ginger. Pour the mixture over the moose ribs, making sure they are evenly coated.
- Cover the roasting pan with foil and bake for 2.5 hours.
- Remove the foil, increase the oven temperature to 400°F (200°C), and bake for an additional 30 minutes, basting the ribs with the glaze every 10 minutes.
- Once the ribs are caramelized and tender, remove them from the oven and let them rest for 10 minutes before serving.
