Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces

  • 1 cup frozen peas
  • 4 cloves garlic, minced
  • 2 tbsp biryani spice mix
  • 1/2 cup yogurt
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, marinate the chicken with yogurt, biryani spice mix, garlic, cilantro, and mint. Let it marinate for at least 30 minutes.
  2. Rinse the basmati rice until the water runs clear. Drain and set aside.
  3. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until they are golden brown.
  4. Add the marinated chicken to the pot and cook until it is no longer pink.
  5. Stir in the carrots, bell pepper, and frozen peas. Cook for a few minutes until the vegetables start to soften.
