Ingredients

  • 2 cups basmati rice
  • 500g lamb, cut into pieces
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2-inch ginger, grated
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1/2 cup plain yogurt
  • 1/4 cup chopped fresh coriander leaves
  • 1/4 cup chopped fresh mint leaves
  • 4 cups water
  • Salt to taste
  • Vegetable oil

Instructions

  1. Wash the basmati rice and soak in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat some vegetable oil over medium heat. Add the sliced onion and cook until golden brown.
  3. Add the minced garlic, grated ginger, cinnamon stick, cardamom pods, and cumin seeds. Sauté for 2 minutes.
  4. Add the lamb pieces and cook until browned.
  5. Stir in the coriander powder, turmeric powder, and chili powder. Cook for 2 minutes.
  6. Whisk the plain yogurt and pour it into the pot. Cook for another 5 minutes.
  7. Add the soaked basmati rice, chopped coriander leaves, and mint leaves. Season with salt and mix well.
  8. Pour in the water, cover the pot, and let it simmer for 20 minutes or until the rice and lamb are fully cooked.
  9. Once done, fluff the biryani with a fork and serve hot.
