Ingredients
- 2 cups basmati rice
- 500g lamb, cut into pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2-inch ginger, grated
- 1 cinnamon stick
- 4 cardamom pods
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1/2 cup plain yogurt
- 1/4 cup chopped fresh coriander leaves
- 1/4 cup chopped fresh mint leaves
- 4 cups water
- Salt to taste
- Vegetable oil
Instructions
- Wash the basmati rice and soak in water for 30 minutes. Drain and set aside.
- In a large pot, heat some vegetable oil over medium heat. Add the sliced onion and cook until golden brown.
- Add the minced garlic, grated ginger, cinnamon stick, cardamom pods, and cumin seeds. Sauté for 2 minutes.
- Add the lamb pieces and cook until browned.
- Stir in the coriander powder, turmeric powder, and chili powder. Cook for 2 minutes.
- Whisk the plain yogurt and pour it into the pot. Cook for another 5 minutes.
- Add the soaked basmati rice, chopped coriander leaves, and mint leaves. Season with salt and mix well.
- Pour in the water, cover the pot, and let it simmer for 20 minutes or until the rice and lamb are fully cooked.
- Once done, fluff the biryani with a fork and serve hot.
