Biryani Laham (yemeni Spiced Lamb Biryani)

Ingredients

  • 2 cups basmati rice
  • 1 pound lamb, cut into cubes
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken or lamb broth
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the sliced onions and cook until golden brown.
  2. Add the garlic, ginger, and all the spices. Cook for a few minutes until fragrant.
  3. Add the lamb cubes and brown on all sides.
  4. Stir in the basmati rice and pour in the broth. Season with salt and pepper.
  5. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Stir in the raisins and slivered almonds. Garnish with fresh cilantro before serving.
