Biryani Laham (yemeni Spiced Lamb Biryani)
Biryani Laham is a traditional Yemeni spiced lamb biryani that is rich in flavor and aromatic spices. This dish is a perfect combination of tender lamb, fragrant rice, and a blend of Middle Eastern spices, creating a hearty and satisfying meal.
Ingredients
- 2 cups basmati rice
- 1 pound lamb, cut into cubes
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon cayenne pepper
- 2 cups chicken or lamb broth
- 1/4 cup raisins
- 1/4 cup slivered almonds
- Fresh cilantro for garnish
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the garlic, ginger, and all the spices. Cook for a few minutes until fragrant.
- Add the lamb cubes and brown on all sides.
- Stir in the basmati rice and pour in the broth. Season with salt and pepper.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Stir in the raisins and slivered almonds. Garnish with fresh cilantro before serving.
