Biryani Ya Kuku (swahili Chicken Biryani)
Biryani ya Kuku, also known as Swahili Chicken Biryani, is a flavorful and aromatic dish that is popular in Tanzanian cuisine. This dish is a perfect combination of fragrant rice, tender chicken, and a blend of spices that will tantalize your taste buds.
Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 3 tomatoes, chopped
- 1/4 cup plain yogurt
- 2 tablespoons biryani masala
- 1 teaspoon turmeric powder
- 1 teaspoon ginger-garlic paste
- 1/4 cup fresh coriander leaves, chopped
- 4 cups water
- Salt to taste
- 4 tablespoons cooking oil
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat the cooking oil and sauté the sliced onions until golden brown.
- Add the chicken pieces and cook until they are no longer pink. Then, add the ginger-garlic paste, biryani masala, and turmeric powder. Stir well.
- Next, add the chopped tomatoes and cook until they soften. Then, add the plain yogurt and mix thoroughly.
- Now, add the soaked basmati rice, water, and salt to the pot. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Garnish with fresh coriander leaves and serve hot.
