Biryani Ya Kuku (swahili Chicken Biryani)

Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 3 tomatoes, chopped
  • 1/4 cup plain yogurt
  • 2 tablespoons biryani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger-garlic paste
  • 1/4 cup fresh coriander leaves, chopped
  • 4 cups water
  • Salt to taste
  • 4 tablespoons cooking oil

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the cooking oil and sauté the sliced onions until golden brown.
  3. Add the chicken pieces and cook until they are no longer pink. Then, add the ginger-garlic paste, biryani masala, and turmeric powder. Stir well.
  4. Next, add the chopped tomatoes and cook until they soften. Then, add the plain yogurt and mix thoroughly.
  5. Now, add the soaked basmati rice, water, and salt to the pot. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  6. Garnish with fresh coriander leaves and serve hot.
