Biscotti (biscotti)
Biscotti, also known as cantuccini, are twice-baked Italian almond biscuits that are perfect for dipping in coffee or dessert wine.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole almonds, toasted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and vanilla extract together.
- Add the egg mixture to the dry ingredients and mix until a dough forms.
- Stir in the toasted almonds.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide.
- Place the logs on a baking sheet lined with parchment paper and bake for 25 minutes.
- Remove the logs from the oven and let them cool for 10 minutes.
- Using a serrated knife, slice the logs into 1/2 inch thick biscotti.
- Place the biscotti cut side down on the baking sheet and bake for an additional 10 minutes.
- Allow the biscotti to cool completely before serving.
