Ingredients

- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Stir in the pistachios and orange zest.
- In a separate bowl, beat together the orange juice, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide.
- Place the logs on the prepared baking sheet and bake for 25 minutes.
- Remove from the oven and let cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).
- Using a serrated knife, slice the logs into 1/2 inch thick biscotti.
- Place the biscotti cut side down on the baking sheet and bake for an additional 15 minutes, or until crisp.
- Let the biscotti cool completely before serving.
