Ingredients
- 1.5 kg bison roast
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the breadcrumbs, Parmesan cheese, parsley, garlic, onion, carrots, celery, and olive oil. Season with salt and pepper.
- Cut a slit in the bison roast to create a pocket for the stuffing. Carefully fill the pocket with the breadcrumb mixture, pressing it in firmly.
- Place the stuffed bison roast in a roasting pan and roast in the preheated oven for 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Let the roast rest for 10 minutes before slicing and serving.
