Ingredients

  • 1.5 kg bison roast
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the breadcrumbs, Parmesan cheese, parsley, garlic, onion, carrots, celery, and olive oil. Season with salt and pepper.
  3. Cut a slit in the bison roast to create a pocket for the stuffing. Carefully fill the pocket with the breadcrumb mixture, pressing it in firmly.
  4. Place the stuffed bison roast in a roasting pan and roast in the preheated oven for 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. Let the roast rest for 10 minutes before slicing and serving.
