Bisque Lobster Pedas (spicy Lobster Bisque)

Ingredients

  • 2 lbs lobster tails, shells removed and chopped
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups seafood stock
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped lobster tails and cook until they turn pink, about 5 minutes. Remove the lobster from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Stir in the paprika and cayenne pepper, then pour in the seafood stock. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  4. Add the cooked lobster back into the pot, then stir in the coconut milk. Simmer for an additional 10 minutes.
  5. Using an immersion blender, blend the bisque until smooth. Season with salt and pepper to taste.
  6. Serve the Bisque Lobster Pedas hot, garnished with fresh parsley.
