Bisque Lobster Pedas (spicy Lobster Bisque)

Ingredients
- 2 lbs lobster tails, shells removed and chopped
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 cups seafood stock
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped lobster tails and cook until they turn pink, about 5 minutes. Remove the lobster from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Stir in the paprika and cayenne pepper, then pour in the seafood stock. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Add the cooked lobster back into the pot, then stir in the coconut milk. Simmer for an additional 10 minutes.
- Using an immersion blender, blend the bisque until smooth. Season with salt and pepper to taste.
- Serve the Bisque Lobster Pedas hot, garnished with fresh parsley.
