Bisque Udang Karang (lobster Bisque)

Ingredients

  • 2 lobsters, about 1 1/2 pounds each
  • 4 tablespoons unsalted butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 1/2 cup brandy
  • 4 cups fish stock
  • 2 cups heavy cream
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Fill a large pot with water and bring to a boil. Add the lobsters and cook for about 8 minutes. Remove the lobsters and let them cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces. Set aside.
  2. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 8 minutes.
  3. Stir in the tomato paste and flour, and cook for 2 minutes. Add the brandy and cook for another 2 minutes.
  4. Gradually add the fish stock, stirring constantly. Bring the mixture to a simmer and cook for 20 minutes.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches, then return to the pot.
  6. Stir in the heavy cream and lobster meat. Simmer for 10 minutes. Season with salt and pepper to taste.
  7. Serve the bisque hot, garnished with chopped chives.
