Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • 1 pound fresh spinach, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a large pot, sauté the onion and garlic until softened.
  3. Add the chickpeas, cumin, paprika, turmeric, and cayenne pepper to the pot, and stir to coat the chickpeas in the spices.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes, or until the chickpeas are tender.
  5. Stir in the chopped spinach and cook for an additional 5 minutes, until the spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Divide the stew into bowls, drizzle with olive oil, and serve hot.
