Bissara (moroccan Chickpea And Spinach Stew)
Bissara is a traditional Moroccan dish that is hearty, nutritious, and bursting with flavor. This vegan stew is made with chickpeas, spinach, and a blend of aromatic spices, making it a perfect comfort food for any occasion.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- 1 pound fresh spinach, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Drain and rinse the soaked chickpeas.
- In a large pot, sauté the onion and garlic until softened.
- Add the chickpeas, cumin, paprika, turmeric, and cayenne pepper to the pot, and stir to coat the chickpeas in the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes, or until the chickpeas are tender.
- Stir in the chopped spinach and cook for an additional 5 minutes, until the spinach is wilted.
- Season with salt and pepper to taste.
- Divide the stew into bowls, drizzle with olive oil, and serve hot.
