Bitter Gourd Curry (bhojpuri Karela Masala)
Bitter Gourd Curry, also known as Bhojpuri Karela Masala, is a traditional dish from the Bhojpuri Cuisine. This flavorful and aromatic curry is made with bitter gourd, spices, and herbs, creating a delicious and nutritious meal.
Ingredients
- 4 medium-sized bitter gourds, thinly sliced
- 2 onions, finely chopped
- 2 tomatoes, diced
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, and sauté for a minute.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Add diced tomatoes and cook until they turn soft and oil separates from the masala.
- Add the sliced bitter gourd and mix well. Cover and cook on low heat until the bitter gourd is tender.
- Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
