Bitterballen Bites

Ingredients
- 1 cup beef or chicken broth
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped cooked beef or chicken
- 2 tbsp chopped parsley
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
- In a saucepan, heat the broth until simmering.
- Melt the butter in a separate saucepan over medium heat.
- Stir in the flour and cook for 2 minutes to make a roux.
- Gradually whisk in the hot broth until smooth and thickened.
- Stir in the chopped meat, parsley, salt, and pepper.
- Spread the mixture in a shallow dish and refrigerate until firm, about 2 hours.
- Shape the mixture into small balls, about 1 inch in diameter.
- Dip each ball into the beaten eggs, then roll in the breadcrumbs until coated.
- Heat the oil in a deep pan over medium heat.
- Fry the bitterballen in batches until golden brown, about 3-4 minutes.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with mustard for dipping.
