Ingredients
- 500g mixed mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 liter vegetable broth
- 200ml heavy cream
- 2 tbsp all-purpose flour
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
- Add the sliced mushrooms and cook until they release their liquid and start to brown.
- Sprinkle the flour over the mushrooms and stir to combine.
- Pour in the vegetable broth and bring the soup to a simmer. Cook for 15 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve the soup hot, garnished with fresh parsley.
