Ingredients

  • 200g black pudding, sliced
  • 2 large yams, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 red bell pepper, diced
  • 500ml beef or vegetable broth
  • 1 tsp paprika
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced black pudding and cook until browned, then remove from the pot and set aside.
  3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  4. Add the diced tomatoes and red bell pepper, and cook for a few minutes until they start to soften.
  5. Stir in the cubed yams, paprika, thyme, and season with salt and pepper.
  6. Pour in the broth and bring the stew to a simmer. Cover and cook for about 40-45 minutes, or until the yams are tender.
  7. Return the cooked black pudding to the pot and allow it to heat through.
