Ingredients
- 200g black pudding, sliced
- 2 large yams, peeled and cubed
- 1 onion, chopped

- 1/2 tsp thyme
- Salt and pepper to taste

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the sliced black pudding and cook until browned, then remove from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the diced tomatoes and red bell pepper, and cook for a few minutes until they start to soften.
- Stir in the cubed yams, paprika, thyme, and season with salt and pepper.
- Pour in the broth and bring the stew to a simmer. Cover and cook for about 40-45 minutes, or until the yams are tender.
- Return the cooked black pudding to the pot and allow it to heat through.
- Adjust the seasoning if needed, then serve the stew hot.
