Black Soup (chimole)

Ingredients
- 1 whole chicken, cut into pieces
- 1 cup black recado paste
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1 tsp oregano
- 1 tsp cumin
- 6 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the black recado paste over medium heat for 2-3 minutes.
- Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Add the onion, garlic, tomatoes, and bell pepper. Cook for another 5 minutes, stirring occasionally.
- Stir in the oregano, cumin, and chicken broth. Bring the soup to a boil, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
