Blackberry Jelly
Blackberry jelly is a sweet and tangy spread that is perfect for toast, biscuits, or as a filling for pastries. This recipe is simple to make and requires just a few ingredients.
Ingredients
- 4 cups fresh blackberries
- 3 cups granulated sugar
- 1 packet powdered fruit pectin
- 1/2 cup water
Instructions
- In a large pot, crush the blackberries with a potato masher.
- In a separate bowl, mix the powdered fruit pectin with the water until dissolved.
- Combine the blackberries and pectin mixture in the pot and bring to a boil over medium-high heat.
- Stir in the sugar and return to a boil, stirring constantly. Boil for 1 minute.
- Remove from heat and skim off any foam with a metal spoon.
- Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace. Seal with lids and bands.
- Process the jars in a boiling water bath for 10 minutes.
- Remove the jars and let them cool before storing in a cool, dark place.
