Blackberry Jelly

Ingredients

  • 4 cups fresh blackberries
  • 3 cups granulated sugar
  • 1 packet powdered fruit pectin
  • 1/2 cup water

Instructions

  1. In a large pot, crush the blackberries with a potato masher.
  2. In a separate bowl, mix the powdered fruit pectin with the water until dissolved.
  3. Combine the blackberries and pectin mixture in the pot and bring to a boil over medium-high heat.
  4. Stir in the sugar and return to a boil, stirring constantly. Boil for 1 minute.
  5. Remove from heat and skim off any foam with a metal spoon.
  6. Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace. Seal with lids and bands.
  7. Process the jars in a boiling water bath for 10 minutes.
  8. Remove the jars and let them cool before storing in a cool, dark place.
