Blackout Cake

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee
  • 1 cup unsalted butter
  • 1 and 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Stir in the hot coffee until the batter is smooth. Divide the batter evenly between the prepared pans.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. To make the frosting, melt the butter in a saucepan over medium heat. Stir in the powdered sugar and vanilla extract until smooth. Remove from heat and stir in the chocolate chips until melted and smooth.
  7. Place one cake layer on a serving plate and spread a layer of frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  8. Refrigerate the cake for at least 1 hour before serving to allow the frosting to set.
