Blini (russian Blini Delight)

Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 2 tablespoons melted butter
Instructions
- In a large mixing bowl, whisk together the flour, eggs, and half of the milk until smooth.
- Add the remaining milk, salt, sugar, and melted butter. Whisk until well combined.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour a small ladleful of batter into the skillet and swirl to spread it into a thin, even layer.
- Cook for about 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve the blini warm with your choice of toppings.
