Blue Rice With Herbs (nasi Kerabu)

Ingredients

  • 2 cups of jasmine rice
  • 1 butterfly pea flower (bunga telang) for coloring the rice
  • 1 cup of shredded coconut, toasted
  • 1 cup of bean sprouts, blanched
  • 1 cup of long beans, thinly sliced and blanched
  • 1 cup of Thai basil leaves
  • 1 cup of mint leaves
  • 1 cup of cucumber, julienned
  • 4 hard-boiled eggs, halved
  • 1/2 cup of dried shrimp, toasted
  • 1/2 cup of fried shallots
  • 1/2 cup of sambal belacan (shrimp paste chili sauce)

Instructions

  1. Prepare the butterfly pea flower-infused water by soaking the flower in hot water. Use the blue water to cook the rice.
  2. Cook the jasmine rice in the blue water until fluffy and fragrant.
  3. Arrange the cooked rice on a serving platter and surround it with the shredded coconut, bean sprouts, long beans, Thai basil, mint leaves, cucumber, and hard-boiled eggs.
  4. Sprinkle the dried shrimp and fried shallots over the rice.
  5. Serve the Nasi Kerabu with sambal belacan on the side.
