Blue Rice With Herbs (nasi Kerabu)

Ingredients
- 2 cups of jasmine rice
- 1 butterfly pea flower (bunga telang) for coloring the rice
- 1 cup of shredded coconut, toasted
- 1 cup of bean sprouts, blanched
- 1 cup of long beans, thinly sliced and blanched
- 1 cup of Thai basil leaves
- 1 cup of mint leaves
- 1 cup of cucumber, julienned
- 4 hard-boiled eggs, halved
- 1/2 cup of dried shrimp, toasted
- 1/2 cup of fried shallots
- 1/2 cup of sambal belacan (shrimp paste chili sauce)
Instructions
- Prepare the butterfly pea flower-infused water by soaking the flower in hot water. Use the blue water to cook the rice.
- Cook the jasmine rice in the blue water until fluffy and fragrant.
- Arrange the cooked rice on a serving platter and surround it with the shredded coconut, bean sprouts, long beans, Thai basil, mint leaves, cucumber, and hard-boiled eggs.
- Sprinkle the dried shrimp and fried shallots over the rice.
- Serve the Nasi Kerabu with sambal belacan on the side.
