Blueberry Pie, known as "Plăcintă cu afine" in Moldovan cuisine, is a delicious dessert that combines the sweetness of blueberries with a flaky crust. This recipe is a perfect way to showcase the abundance of fresh blueberries during the summer months.

Blueberry Pie (plăcintă Cu Afine)

Ingredients

  • 4 cups fresh blueberries
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 pre-made pie crusts
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, gently toss together the blueberries, sugar, flour, lemon juice, cinnamon, and salt until well combined.
  3. Line a 9-inch pie dish with one of the pie crusts. Pour the blueberry filling into the crust.
  4. Place the second pie crust over the filling. Trim any excess dough and crimp the edges to seal the pie.
  5. Brush the top crust with the beaten egg to create a golden finish.
  6. Using a sharp knife, make several small slits in the top crust to allow steam to escape.
  7. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Allow the pie to cool before serving.
