Bo Ssam
Bo ssam is a traditional Korean dish featuring tender, slow-cooked pork wrapped in lettuce leaves and served with flavorful condiments. It's a popular dish for gatherings and special occasions, as it's interactive and delicious.
Ingredients
- 5-6 lbs pork shoulder
- 1 cup brown sugar
- 1 cup salt
- 1 head garlic, minced
- 1 knob ginger, grated
- 1 cup soy sauce
- 1 cup rice wine
- 2 cups water
- Lettuce leaves, for wrapping
- Kimchi, for serving
- Ssamjang (Korean dipping sauce), for serving
Instructions
- Combine brown sugar, salt, garlic, ginger, soy sauce, rice wine, and water in a large pot to create the brine.
- Add the pork shoulder to the brine and refrigerate for at least 4 hours, or overnight.
- Preheat the oven to 300°F (150°C).
- Remove the pork from the brine and place it in a roasting pan. Discard the brine.
- Cover the pan with foil and roast the pork for 5-6 hours, until it's tender and easily shreddable.
- Shred the pork and serve it with lettuce leaves, kimchi, and ssamjang.
