Bo Zai Fan (clay Pot Rice)
Bo Zai Fan, or Clay Pot Rice, is a classic Cantonese dish that features flavorful toppings served over steaming hot rice, all cooked together in a clay pot.
Ingredients
- 2 cups jasmine rice
- 1 3/4 cups water
- 1/2 lb Chinese sausage, sliced
- 1 cup shiitake mushrooms, sliced
- 4 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp white pepper
Instructions
- Rinse the jasmine rice and drain well. Place it in the clay pot and add water. Let it soak for 30 minutes.
- Arrange the Chinese sausage and shiitake mushrooms on top of the rice.
- Cover the clay pot and cook over medium heat for 15-20 minutes, or until the rice is cooked and the toppings are heated through.
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, and white pepper.
- Once the rice is cooked, drizzle the sauce over the toppings and rice. Sprinkle with chopped green onions.
- Stir everything together before serving.
