Boberry Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1/2 cup blueberries
  • 1/4 cup cream cheese
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Gently fold in the buttermilk and blueberries until just combined.
  5. Turn the dough out onto a floured surface and pat it into a 1-inch thick circle.
  6. Use a biscuit cutter to cut out the biscuits and place them on a baking sheet.
  7. Bake for 15-18 minutes, or until the biscuits are golden brown.
  8. While the biscuits are baking, mix together the cream cheese, powdered sugar, and vanilla extract to make the icing.
  9. Once the biscuits are done, let them cool for a few minutes before topping them with the icing.
