Boberry Biscuits

Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1/2 cup blueberries
- 1/4 cup cream cheese
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gently fold in the buttermilk and blueberries until just combined.
- Turn the dough out onto a floured surface and pat it into a 1-inch thick circle.
- Use a biscuit cutter to cut out the biscuits and place them on a baking sheet.
- Bake for 15-18 minutes, or until the biscuits are golden brown.
- While the biscuits are baking, mix together the cream cheese, powdered sugar, and vanilla extract to make the icing.
- Once the biscuits are done, let them cool for a few minutes before topping them with the icing.
