Bobotie (siswati Bobotie)
Bobotie is a traditional dish from Eswatini, also known as Siswati Bobotie, that is full of flavor and a perfect representation of the country's cuisine.
Ingredients
- 1 kg ground beef
- 2 slices of white bread
- 1 cup milk
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tbsp curry powder
- 1 tbsp apricot jam
- 1 tbsp vinegar
- 1/2 cup raisins
- 1/4 cup slivered almonds
- 3 eggs
- Bay leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Soak the bread in the milk.
- Sauté the onions and garlic in a pan until soft.
- Add the ground beef, curry powder, apricot jam, vinegar, raisins, and almonds to the pan. Cook until the beef is browned.
- Remove the bread from the milk and add it to the beef mixture. Mix well.
- Transfer the mixture to a baking dish and press it down evenly.
- Beat the eggs and pour them over the beef mixture. Place bay leaves on top.
- Bake for 45 minutes or until the egg is set and golden brown.
