Bobotie is a traditional dish from Eswatini, also known as Siswati Bobotie, that is full of flavor and a perfect representation of the country's cuisine.

Ingredients

  • 1 kg ground beef
  • 2 slices of white bread
  • 1 cup milk
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tbsp curry powder
  • 1 tbsp apricot jam
  • 1 tbsp vinegar
  • 1/2 cup raisins
  • 1/4 cup slivered almonds
  • 3 eggs
  • Bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Soak the bread in the milk.
  3. Sauté the onions and garlic in a pan until soft.
  4. Add the ground beef, curry powder, apricot jam, vinegar, raisins, and almonds to the pan. Cook until the beef is browned.
  5. Remove the bread from the milk and add it to the beef mixture. Mix well.
  6. Transfer the mixture to a baking dish and press it down evenly.
  7. Beat the eggs and pour them over the beef mixture. Place bay leaves on top.
  8. Bake for 45 minutes or until the egg is set and golden brown.
