Bobotie Stuffed Peppers

Ingredients

  • 4 large bell peppers, halved and seeds removed
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 2 slices white bread, crusts removed and soaked in milk
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender.
  3. Add the curry powder, turmeric, and coriander to the skillet, and cook for an additional 2 minutes.
  4. Stir in the raisins and slivered almonds, then remove the skillet from the heat.
  5. Squeeze the excess milk from the soaked bread and add it to the beef mixture. Mix well.
  6. In a small bowl, beat the eggs and season with salt and pepper. Pour the beaten eggs over the beef mixture and stir to combine.
  7. Place the bell pepper halves in a baking dish and spoon the beef mixture into each pepper half.
  8. Bake in the preheated oven for 30-35 minutes, or until the peppers are tender and the filling is set.
  9. Remove from the oven and let it cool for a few minutes before serving.
