Bobotie Stuffed Peppers

Ingredients
- 4 large bell peppers, halved and seeds removed
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 slices white bread, crusts removed and soaked in milk
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender.
- Add the curry powder, turmeric, and coriander to the skillet, and cook for an additional 2 minutes.
- Stir in the raisins and slivered almonds, then remove the skillet from the heat.
- Squeeze the excess milk from the soaked bread and add it to the beef mixture. Mix well.
- In a small bowl, beat the eggs and season with salt and pepper. Pour the beaten eggs over the beef mixture and stir to combine.
- Place the bell pepper halves in a baking dish and spoon the beef mixture into each pepper half.
- Bake in the preheated oven for 30-35 minutes, or until the peppers are tender and the filling is set.
- Remove from the oven and let it cool for a few minutes before serving.
