Bodi Rihaakuru (sweet Potato Curry)
Bodi Rihaakuru is a traditional Maldivian curry made with sweet potatoes, coconut milk, and aromatic spices. This creamy and flavorful dish is a staple in Maldivian cuisine and is perfect for a cozy and comforting meal.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, sliced
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp chili powder
- Salt to taste
- 2 tbsp coconut oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the coconut oil over medium heat.
- Add the chopped onion, garlic, ginger, and green chili. Sauté until the onions are soft and translucent.
- Stir in the turmeric, cumin, coriander, and chili powder. Cook for 1-2 minutes until fragrant.
- Add the sweet potatoes to the pot and stir to coat them with the spices.
- Pour in the coconut milk and season with salt. Bring the curry to a gentle simmer.
- Cover the pot and let the curry cook for 20-25 minutes, or until the sweet potatoes are tender.
- Garnish with fresh cilantro before serving.
