Bodi Rihaakuru (sweet Potato Curry)

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 tbsp coconut oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the chopped onion, garlic, ginger, and green chili. Sauté until the onions are soft and translucent.
  3. Stir in the turmeric, cumin, coriander, and chili powder. Cook for 1-2 minutes until fragrant.
  4. Add the sweet potatoes to the pot and stir to coat them with the spices.
  5. Pour in the coconut milk and season with salt. Bring the curry to a gentle simmer.
  6. Cover the pot and let the curry cook for 20-25 minutes, or until the sweet potatoes are tender.
  7. Garnish with fresh cilantro before serving.
