Ingredients

  • 2 large eggplants
  • 1 cup breadcrumbs

  • 1 teaspoon paprika
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.
  3. Sprinkle the eggplant slices with salt and let them sit for 10 minutes to draw out the bitterness. Then, rinse and pat dry with paper towels.
  4. In a bowl, combine the breadcrumbs, onion, garlic, cumin, paprika, parsley, salt, and pepper.
  5. Place a spoonful of the breadcrumb mixture on each eggplant slice and roll it up tightly.
  6. Heat oil in a large skillet over medium heat. Fry the eggplant rolls until golden brown and crispy on all sides.
  7. Transfer the fried eggplant rolls to a paper towel-lined plate to drain excess oil.
