Bodring (crispy Fried Eggplant Rolls)

Ingredients
- 2 large eggplants
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 cup chopped fresh parsley
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.
- Sprinkle the eggplant slices with salt and let them sit for 10 minutes to draw out the bitterness. Then, rinse and pat dry with paper towels.
- In a bowl, combine the breadcrumbs, onion, garlic, cumin, paprika, parsley, salt, and pepper.
- Place a spoonful of the breadcrumb mixture on each eggplant slice and roll it up tightly.
- Heat oil in a large skillet over medium heat. Fry the eggplant rolls until golden brown and crispy on all sides.
- Transfer the fried eggplant rolls to a paper towel-lined plate to drain excess oil.
- Serve the bodring hot with your favorite dipping sauce or yogurt.
